A striking prawn preparation with a predominant flavour of green garlic served hot sprinkled with grated cheese

Ingredients:

Jumbo prawns - 4
Fennel seeds (saunf) - 1 tablespoon
Cloves - 3-4
Coriander seeds - 1 tablespoon
Oil - 2 tablespoons
Mustard seeds - 1/4 teaspoon
Curry leaves - 5-6
Caraway seeds (shahi jeera) - 1/4 teaspoon
Onion , chopped - 1 large
Green garlic, chopped - 10-12 stalks
Green chillies, chopped - 2-3
Coconut, scraped - 1/2 cup
Salt to taste
Fresh coriander leaves, chopped - 3 tsp
Lemon juice - 2 tablespoons
Cheese, grated - 1/2 cup

Wonton wrapped spicy prawns deep fried till crisp

INGREDIENTS
Jumbo prawns, peeled and deveined , with tails intact
16 (470 grams)
Red curry paste - 1 teaspoon
Fish sauce - 1 tablespoon
Salt to taste
Wonton wrappers - 16 (4 inch x 4 inch)
Egg noodles, soaked in hot water for 2-3 minutes- 16
Oil to deep fry

INGREDIENTS

Prawns (jhinga), shelled and headless-400 grams
Cinnamon - 1 inch stick
Cloves - 8-10
Cumin seeds - 2 teaspoons
Coriander seeds - 1 tablespoon
Whole dry red chillies - 8-10
Coconut, scraped - 1/2 cup
Malt vinegar - 2 tablespoons
Oil - 3 tablespoons
Onions, chopped - 3 medium
Ginger paste - 2 teaspoons
Garlic paste - 2 teaspoons
Salt to taste

1 cup long grain Indian Basmati Rice
2 cup warm water and extra water, for washing
and soaking rice
Salt to taste
1/4 tsp Saffron Strands
1 Bay Leaf
2 - 2 inch Cinnamon Sticks
4 Green Cardamoms
15-20 pieces of Paneer (Cottage Cheese) cubes (about 1cm x 1 cm each)
1/3 cup Raisins
10 Cashew Nuts
A little Hot Milk
2 tbsp Ghee (clarified butter), for frying
